Kulukki Sarbath is a cool summer drink that is unique to Kerala, and it is prepared by mixing sour lemon juice, sweet basil seeds (sabja), a small amount of green chili, and sugar syrup and shaking them well with ice-cold water. The wonder of the drink is its combination of sweet, pungent, and sour tastes, in addition to basil seeds providing natural cooling effects and a interesting jelly-like consistency.
To make it, make a sugar syrup, soak the basil seeds in water so that they open, then combine lemon juice, lemon wedges, slit green chili, basil seeds, sugar syrup, salt, and ice cubes in a shaker. Shake well and serve chilled for an instant energy boost. It is perfect for hot summer afternoons and offers a cool turn on the traditional lemonade.
